Pumpkin Spice Chia Pudding

I posted this on our Facebook Page last week, but want to add it to the blog so you guys know where you can look for the recipe whenever you're itchin' for some pumpkiny goodness-

Starbuck's pumpkin spice latte is full of high fructose corn syrup, artificial flavors and preservatives - toxins, toxins, toxins! AND ZERO PUMPKIN!!! From Starbucks Website:

CONDENSED NONFAT MILK, SUGAR, HIGH FRUCTOSE CORN SYRUP, ANNATO (FOR COLOR), NATURAL AND ARITIFICIAL FLAVORS, CARAMEL COLOR, SALT, POTASSIUM SORBATE (PRESERVATIVE).
I know it tastes amaaaaaazing, I get it. But, think about this - "pumpkin spice" is a flavor that has been enjoyed for a very, very long time - long before high fructose corn syrup and lab-created preservatives were even a twinkle in a chemist's eye. There is absolutely zero need to consume such toxic elements in order to enjoy that wonderful flavor. It's not worth it guys.  Instead, heat up some of my organic pumpkin spice chia pudding for that comforting fall flavor we all love - without the damage to our bodies' health!

Pumpkin Spice Chia Pudding

3/4 C - Coconut Milk
1/2 C - Pumpkin
1/4 C - Chia Seeds
1 tsp - Homemade Pumpkin Pie Spice (nutmeg, cinnamon, all spice, ginger)
(For added sweetness use organic maple syrup or honey)

Shake it up in a mason jar and let sit over night! Enjoy warm or cold! You won't be sorry!
