Roasted Lemon Thyme Brussels Sprouts

I posted a picture of these beauts' over on the Facebook Page. They are A-MAZING! A lot of people hate brussels sprouts, but I think a lot of those people probably just grew up being told brussels sprouts were gross so now they just think they hate them. How can you hate these bite-size-cabbage-like-darling-little-vegetables! The answer is: you cannot. And that is that!

Roasted in some coconut oil and tossed with some himalayan salt, black pepper and fresh picked lemon thyme - I dare you to resist them! Brussels sprouts are really rich in Vitamin K and Vitamin C, glucosinolates which are linked to cancer prevention and are a really great food for detoxification. One whole cup of b-sprouts is only 38 calories but packs 3g of protein! 

Brussels sprouts test fairly low in pesticides, so I give you the green light to buy non-organic brussels sprouts. Just be sure to wash them thoroughly!

Without further ado, the recipe:

  • Ingredients

    • 3-4 Cups Brussels Sprouts, Washed Thoroughly
    • 1 Tbsp Organic Coconut Oil
    • Few Sprigs of Fresh Lemon Thyme
    • High Quality Salt
    • Black Pepper
    • 1/2 Lemon
  • Instructions 

    1. Preheat Oven to 400* F
    2. Wash Brussels Sprouts Thoroughly
    3. Melt 1 Tbsp of Coconut Oil
    4. Toss Brussels Sprouts, Melted Coconut Oil, Salt, Pepper, and Lemon Thyme in a Bowl, Coating Evenly
    5. Spread Evenly on Baking Sheet or Casserole Dish
    6. Roast for 30-35 Minutes
    7. (Check in halfway through, giving them a light toss and turn if needed)
    8. Remove from Oven and Squeeze 1/2 Lemon Overtop
    9. Enjoy!
